Bean Brownies

I love brownies as much as anyone else does but they are not something I make on regular basis due to eggs and milk being in the ingredients and I cant always be bothered making flax eggs, or I don’t have and flax in the pantry.
If you have read my “about me” you will know I like convenience because I make things on impulse and need to do it straight away. For example I made these brownies at 10 o’clock at night!
I have two versions and both are equally delicious.
First one is essentially two ingredients but technically not… If you don’t care for clean eating then this one is for you, i highly recommend the 2nd version as it is much better for you.

Version 1 –

You will need:

Brownie store bought mix
1 can of black beans or kidney beans
Chocolate chips (usually comes in packet) make sure its vegan, check the box

Method:

Rinse beans and add to food processor add a little water if its to thick, once blended you can add the brownie mix, pulse until both ingredients are combined. Grease a baking tray and pour mixture evenly in tray, place in oven on 200c for 20-30 minutes (everyones ovens are different, just keep checking them)
Once the brownies are cooked leave on bench to cool down
Optional- while the brownies are hot pour vegan chocolate chips on top and with a spoon move them around to melt down for icing.
If you do not have vegan chocolate you can make an icing with cocoa powder and rice maple syrup – see how its done with this snickers slice.

Version 2-

You will need:

1 can of beans
1 tbsp of 100% peanut butter or nut butter of your choice. If you are allergic to nuts you can leave it out all together.
1tsp of cinnamon
5-10 dates(pitted)
1/2 a tsp of vanilla extract or paste
3-4 tbsp of cocoa powder

Method:

Rinse beans then In a blender or food processor add everything except the cocoa powder. If it is to thick add some water then once everything is combined you can add the cocoa powder, pulse until everything is combined. Grease baking tray and pour mixture in tray, cook on 200c for 20-30 minutes.
Once cooked add chocolate icing and leave to cool.

Optional Before you put it in the oven you can add cocoa nibs.

PEANUT BUTTER – Are one of the healthiest foods you could consume, They are high in Protein, Iron, B6, Magnesium, Potassium, Vitamin E, Niacin, Folate and Resveratrol, the Phenolic Acid that can also be found in Red Grapes. Peanuts are also very high in Anti-oxidants and help to support the heart.

CINNAMON – Helps to control Blood Sugar, It is Anti Microbial, Anti Bacterial and is rich in Antioxidants, Magnesium, Manganese, Iron and Calcium. Cinnamon can also help with Memory and Alertness.

VANILLA – Rich in Magnesium, Potassium, Calcium. Vanilla is also considered to be an Aphrodisiac as it enhances the hormones Oxytocin and Dopamine

COCOA POWDER – High in Iron, Magnesium, Calcium and Antioxidants such as Resveratrol to help support a healthy heart. Cocao is also high in natural occurring chemicals that help to support your Neurotransmitters such as Dopamine, Serotonin, Anandamide and Phenylethylamine.

 

 

These brownies are fudgey and chocolaty, You can not even taste the beans and because of the added beans these brownies are high in protein and fibre! Perfectly fine for anytime of the day, and you wont feel guilty going back for more! Win, Win!

Please note the brownie mix i used is debatable as it contains palm oil. I do not recommend this at all here is why http://www.saynotopalmoil.com/Whats_the_issue.php I strongly suggest you boycott any brand that uses palm oil. (i feel guilty even using this brownie mix) however this box has been sitting in my pantry for about a year and a half, I used it as I already owned it, I would not buy it again.
